Baked Elephants Beans with Sausage 

Ingredients (serves 5)

1 / 2 kg elephant beans
3 onions (medium-sized)
1 chopped tomato
1 clove of garlic
2 tablespoons of chopped celery
A sausage
black pepper
salt
2 cups of water (from the elephant beans)
1 / 2 cup olive oil

After washing the beans, soak them in a pot overnight, to swell up very well. Then put them in a saucepan and boil for 50 minutes.

Sauté the onions (cut into rings) in a skillet and add olive oil. Then add the sausage (cut into rings), tomato, celery, garlic (chopped), salt and pepper. Add a little water and as soon as it boils, remove from the heat.

Then strain the Elephant beans (but leave in two cups of water) and put them in a Pyrex dish. Add the two cups of bean water to the sausage and pour the sauce over the beans. When the water has been absorbed, turn off the oven.
