Baked coloured elephant beans

Ingredients (serves 6)

1 / 2 Kg of coloured elephant beans
1 onion, chopped
2 carrots, cut into long slices
1 red pepper
1 green pepper
2 ripe tomatoes, cut into small pieces
1 large potato, cut into small pieces
1 / 2 cup tomato juice concentrate
1 / 2 cup olive oil
some sugar
Oregano - salt - pepper
paprika

Wash the beans and soak them overnight.

Strain and add new water, boil for 45 minutes (attention: without salt). Then remove from the heat and drain.

Whilst the beans are cooking, sauté the remaining ingredients in another pan.

Pile everything into a Pyrex dish and cook in the oven until almost all the juice has been absorbed.

A hearty, fragrant meal.
