Baked Elephant/Giant Beans

Ingredients (serves 5)

1 / 2 Kg beans
1 cup olive oil
1 cup fresh tomato juice
1 tablespoon tomato paste (sauce)
1 teaspoon of sugar
1 large onion, dry
2 dried Florina peppers (red)
1 / 2 bunch parsley
Pepper (black pepper or red)

Wash the beans and leave them to swell in a bowl with lukewarm water for 3 to 4 hours. Then put them in a saucepan with enough water and boil for 45 to 50 minutes.

Meanwhile, sauté the onion and garlic in a pan with the olive oil. Then add the fresh tomatoes, tomato paste, pepper and chopped parsley. Sprinkle salt, pepper, oregano, sugar and some water and leave it to simmer until the sauce thickens.
When the beans are almost cooked, put them in a pan with a little of their juice and pour over the tomato sauce.
Bake in a preheated oven for around half an hour and just before the dish comes out of the oven, sprinkle with breadcrumbs.
