Giant Beans in the pot

Ingredients (serves 5)

1 / 2 Kg of giant beans
2 large onions (in the blender)
3 carrots, sliced
1 / 2 cup chopped celery
1 cup tomato juice
1 / 2 cup olive oil
black pepper
salt

Soak the Giant beans overnight in enough water to swell.
Drain and put in a saucepan with enough water to boil for 40 minutes.
Then add the onion, carrots, celery and just as they start to reduce, add the tomato juice, olive oil and pepper. Stir once and boil, add salt and turn off the oven.
