Coloured Elephant bean salad

Ingredients (serves 3)

250 gr. coloured elephant beans
1 / 2 cup chopped parsley
4 peppers, chopped
3 green onions, chopped
5 tablespoons olive oil
2 tablespoons vinegar
1 tablespoon mustard
1 teaspoon honey
black pepper

Wash the beans and soak them in a pot overnight, to swell up very well. The next morning, boil for 50 minutes, strain and set aside on a platter to cool.

In a bowl add the olive oil, vinegar, mustard, honey and black pepper and beat in a mixer. Add parsley, peppers and onions to the sauce and stir with a spoon. Pour the mixture into a bowl with the beans and stir gently.

Leave in the refrigerator for 1 / 2 an hour and the salad is ready.
